Have you seen this new craze? With the rise of home freeze drying we are seeing a huge discussion and use of zucchini flour. Zucchini flour is 100% zucchini when bought from me at Albertz Acres.
Now we ask "why would I ever want to use that?"
I thought the same thing! I don't need one more thing around my house taking up space. BUUT I learned so quickly that it's so versatile! The best thing about zucchini is that it really doesn't have its own taste and blends into the background. Because I don't add anything else to the flour it maintains its nice light color and light flavor.
I do remove the skins and the seeds which helps as well. This is all from trial and error by having picky eater in my house who sees green and becomes Nancy Drew to figure out why and how I could put such nasty vegetables in their food. Anyone else relate?
Well to the rescue is... you guessed it zucchini flour! It blends in to sauces, soups, casseroles, breads, and even baked goods! If you can eat it you can add zucchini flour to it! Adding that extra veggie to dishes always makes me feel better when feeding my family. Nothing sucks more than when you make a side of green beans or broccoli and no one eats it. 😩
Another huge plus of zucchini is its minerals and vitamins can help aid in digestion and help lower risks of heart disease. While this is super common with vegetables this is a secret super hero! Heck add it on top of other veggies!
What is involved in making zucchini flour?
All of my zucchini flour is freeze dried using my Harvest Right Medium sized freeze dryer. I have an older model so mine only has four drawers currently and I can fit 8 large size (what we call "forgotten zucchini" in my house) in one run. What I have learned is that 1 freeze dried forgotten zucchini equals 1 ounce of freeze dried zucchini powder.
I peel, core, and shred the zucchini before freeze drying which takes a minimum 36 hours, typically closer to 45 for it to be completely dry which is a MUST be! Once it is out of the freeze dryer I immediately transfer it to the blender to powder it and then right into either product bags with an oxygen absorber or a mylar bag for storage. Because zucchini has such a high moisture in the original product it sucks up any humidity in the air when it is freeze dried and best to not do it on humid days.
